I have heard people descrieb the process and it sounds extremely easy. The other option is to go with the cheapest version possible and plug in a XX GB flash drive. It's worked well for me.

After beating Far Cry 3 I walked in the wilderness playing sports and racing games for a few days. Even played Yager (by Yager). No bad actually, but it locked up so much I could not actually play it.
So I settled in on playing Halo: combat Evolved again. This time the HD version that was released last year (not the gimped XBOne version).
I really want to play this game. But as with so many others, lack of time and the fact that it's on PC will probably mean I never will.
I didn't know you could plug in Flash cards? That changes everything. I can get a 64Gig flash drive for under €40. So does this stack up with the 12Gig one, or do you have to take out a physical 12Gig Flash card and replace it with a different one?

I'm calling it now: Nintendo managed to buy up millions of surplus Vita's on the cheap as part of it's Mario movie deal with Sony and is rebranding them as WiiU Gamepad's as we speak. You heard it here first!
FULL RECANT: I just went to check my PS3. It is my 360 that has that functionality, not my PS3.
But I still heard it is easier to switch out drives in the last ps3 revision (the top slider). In fact there is a rubber boot on the side you can open to make it easy to pop in another drive. But given my track record on this topic, I cannot blame you if you discount this really credible and well researched information

Ah well... I checked out the youtube video Ravenprose posted, eventhough it's not technically his own experience
on the matter, and it does look easy. And then now the hard part: can I be arsed with actually getting one before the craving for a PS3 dies again, as it did many, many times before?
edit: also, while googling for the HDD caddy, I found this Youtube video of someone demonstrating how to install a HDD in the PS3 superslim without the use of the bracket. Instead he uses an old credit card, or a card of similar dimension and material. Now what makes it funnier still is the fact that he's Dutch
