Yep. There's people you'll speak to who tell you about a fabulous job and then give you the quest for it. They're tough ones though so get ready to work a bit.
Can't seem to find the gladiator class quest. Is that the one that the old man in the entrance of the shrine gives you? Seems like a fighter vocation quest.
Stopped levelling up as a warrior and got back to minstrel. Now I am all pumped for finding one of the unlockable classes. See what you've done, robio?

No it's not that guy, that is a fighter specific quest. Christ I'm straining to remember.... I think it was from a very unlikely source. I think there was a guy dressed as a bishop or priest in the bottom floor (inn/shop area) of the abbey who offers up the quest.
Finally found the quest that lets you change vocation to Gladiator. The class fucking owns bitches left and right. I'm now Lv 10 and dealing more damage than my Lv 20+ minstrel.
Yep, Gladiators are a badass class. Wait till you get some of their class specific skills down too. They pretty much mow down everything.
Got too cocky last night. Sailed the blue ocean with my new boat, and ended up in the northernmost part of the sea, which I presume I wasn't ready for. I was attacked by a group of weird enemies that dealt shitloads of damage and ended up dead. ;_;
Quests are so weird and interesting at the same time. I just did the Mason one, which was pretty cool in the way it was presented. Same for the living doll one.
My Lv 15 Gladiator is now stronger and deals more damage than my Lv 23 fighter. Fighter still has more HP, though.
I fell asleep while holding the DS last night, right after saving.
Unlocked the ranger vocation!
Unfortunately, it kind of sucks.
Oh well, I'll keep levelling my newfangled ranger up to see if it is a late bloomer vocation.
The Ranger classs getsa pretty good as time goes by, particuarly if you're working on the bow skill.
Of the original 6 classes I don't think there's one that's really heads better above the rest. Not until you master the class. There are skills that you advance in that are better than others however. I can't stress how valuable the shield skill is. The unlockable classes on the other hand are all quite valuable and give you access to weaponry and skills the others can't get. Of those 6 they're all quite good except for maybe the Armamentalist which aside from some snazzy clothing tends to be rather worthless.
Now that you've unlocked the class change system now would be a good time to start unlocking some of those classes. Quests for Armamentalist and Gladiator (awesome class) are both in the shrine, and the one for Ranger isn't too far away if memory serves correct.
