Crazy Taxi and the GTA's are good ones.
I am particularly fond of the use of licensed songs in Scarface: The World is Yours. You have to unlock most of them and they get better as the game goes on. A very diverse range too. Oh and it has the original soundtrack of the movie too, not the botched versions as heard in GTA3.

SSX 3. Easily the best soundtrack in the entire series.
Tony Hawk 3 & Red Dead Redemption for me.
This topic gets tossed around once every so often, but by chance I came across "All I Want" by Offspring today, which is probably better known as the Offspring Crazy Taxi song. I'm not a huge Offspring fan, but that song and that game were a perfect combo. They complimented each other perfectly.
Anyway it got me to thinking about other great songs that were put into video games. The other great example I can think of was "Ain't No Rest For the Wicked" at the start of Borderlands. Once again, that song just fit that moment like a glove.
Any other thoughts?
