Only one that sticks out is the boss from Little Kings Story, the boss was allright actually it's just that if you die you have to go through a whole long sequence just to get back to them.
Breath of the Wild The first form was an abomination and not fun to battle at all, the second form didn't do much of anything and was laughably easy. To a larger extent: all bosses in BotW were very underwhelming.

I hate penultimate boss, the one you get to, and are like "Yeah, this is it, about time this game wrapped up. HERE WE GO. Imagonna throw all my resources at this." Then you beat it and... THE FINAL BOSS APPEARS.

Really? I loved Metroid Prime and found it to be pretty challenging the first time I finished the game. The Metroid Prime 3 boss, however...

The first time I played it I pretty much accidentally skipped the entire fight by keeping a rocket launcher from earlier, which one-shots the first part of the battle, then you just shoot him again with the rocket they give you and he's dead. Yeaaaahhh that wasn't so exciting.

Really all the boss battles are super easy if you always have a rocket launcher with you. Every boss in the game can be beaten with basically one shot. Or if it's a multi-part fight you can use the rocket to either finish it quick or get to the second part quickly. Of course, the first time through you don't know when a boss is coming so it's pretty tough to plan.

Mech Assault 2's boss, because I just couldn't beat it.
Which actually makes it one of the best bosses, in a way.
Not quite the worst final boss, but the Dark Dragon in Tokyo Mirage Sessions needs to be mentioned I think. TMS has a really fun combat system for a turn-based RPG, but at the end of the day it is a turn-based RPG and the Dark Dragon boss is over 20 minutes long. Probably closer to 30. It's a tough battle, but the sheer length of it makes it very annoying.
