I've seen Super Mario RPG mentioned, but I think Earthbound remade in the style of the Switch version of Link's Awakening would be a pretty big deal.
Of course, there's always a remake of the unreleased Star Tropics 3 for the SNES. But since that never got an official release, I'm pretty sure they're not going to do that. I mean, the next gen Star Tropics 3 had been in development for a while after all.
