Batman: Return of the Joker. It had pretty good looking graphics for a NES game. Character sprites were fucking huge as well, and the music kicked ass.

Jungle Hunt (Atari 2600) graphics blew my mind back in the day.

I remember being entranced by Jungle Hunt in the arcade. The strangest thing about it was that you could actually tilt it. I used to play it at a rollerskating rink (do those exist anymore?), and I accidently kicked the machine with my skates while trying to balance myself and then TILT popped up on the screen and my turn was over.

Vagrant Story was the best looking, and sounding, game to ever release on the Playstation. Very impressive, even with Maxed out N64 games and new Dreamcast games releasing at the same time.
