I'm very addicted to Team Deathmatch on GTA IV. So much chaos, so much fun.
I'll go one by one:
Ace Combat 6 - If you like flying games I guess.
Alan Wake - yeah like this is ever coming out.
Alone in the Dark - Played the demo, wanted to pour gas on myself and light a match.
Assassin's Creed - Fun despite its flaws, I would rent
Assassin's Creed 2 -Hopefully fixes what was wrong with the first
Banjo-Kazooie: Nuts & Bolts - Would be a definte purchase for me.
Batman: Arkham Asylum - Looks so amazing, better be good.
Bayonetta - YES.
Beautiful Katamari - Didnt hear much about this one, is there something wrong with it.
CoD4 - Excellent game, buy.
Chronicles of Riddick: Assault on Dark Athena - Loved the first, I assume its good.
Dead Rising - Fun, could find cheap so worth a buy
Dead Rising 2 - Probably like the first
Dead Space - Awesome, worthy of a buy
Doom 4 (assuming it comes to the 360, which is probably a given) - uh, there is nothing on this.
FEAR - Crap.
FEAR 2 - Probably more crap
FEAR Files - Probably nicely organized crap
Fable 2 - It should be better than the first which was a cool game. A buy for me.
Fallout 3 + DLC - HELL YES.
Fallout: New Vegas - As long as its as good as Fallout 3, then a buy
Far Cry 2 - Snore. Rent if you must play it...
Final Fantasy XIII - Fuck yes.
Gears of War (PC version's actually better, but I'd like to keep the series in one place) - Probably worth it
Gears of War 2 - Same as above, will buy for sure.
GTA4 + DLC - No brainer
Halo 3 + Halo 3 ODST - Same as above
Left4Dead (might prefer it for the PC... not sure yet) - Its basically an online only game, not sure if I would buy or rent
Lost Planet Extreme Condition Colonies Edition - Some people like it.
Mass Effect (PC version's actually better) - Definetly want to get this.
Mirror's Edge - Great game if you get into it, it could be something that never clicks though.
Ninja Blade - Dont know enough.
Ninja Gaiden 2 - Heard its a mess but I already own it, just need a 360 to play it.
Overlord - Loved the demo
Perfect Dark 0 - Could find really cheap like i did ($4), worth it I assume
Prince of Persia - Another iffy game, if you can get into it you would like it a lot but it gets repetitive.
Rage - Not enough info
RE5 - Buy or die.
Soulcalibur 4 - Get VF4 instead.
Spiderman: Web of Shadows - Ask GME
Star Wars: The Force Unleashed - Fun game, wouldnt pay full price for
Street Fighter 4 (not planning on getting an arcade stick, so this isn't a definite buy) - Yes.
Tales of Vesperia (not a big fan of JRPGs, but this looks fun) - No clue

Well you have a great list there already and I'd say those are all worth picking up with only one exception and that being Alone in the Dark. That one didn't sound too good at all although I haven't even played the demo of it myself so I'm only basing my opinion on the general critical reception and my gut instincts as a gamer. The great thing is that there are a lot of really good games you can get cheap on the 360 now. Lost Odyssey is definately a game I would recommend but you say you're not that much into JRPG's so I don't know but it's probably one of the best ones I've played this gen and I've seen it going for $30 CDN brand new.
EDIT: Ok make that two exceptions. I'd probably pass on Web of Shadows as well although again this is a game I haven't played.
As for waiting for Gears of War 2 hitting PC I don't know about that since they seemed pretty adamant about it not coming to PC and I don't think the first one did so well on the PC. I say why wait when you can enjoy it now. I guess you can wait until E3 is over. If nothing is announced about a PC version then I doubt there will be one or at the very least it will be released so far down the road that it probably won't be worth the wait.

I saw the news about the 360+Halo3+Fable2 bundle, but I think I'd rather just get a Pro for $100 less and choose my own games at used prices, especially since the Jasper chipset is much more common in Pros than in Elites.
