the seeds annoy me. I cannot fathom how there are so many considering how much of the map I've scoured. I have to find more. I was considering a point by point trek through each section rather than the usual wandering followed by getting distracted.

Yeah, it starts off beeping if you are in the general area. Then beeps more when you are heading in the right direction. Then if you pass over it and it beeps less it means it was probably above or below you and you passed over it. You can also use it to locate any item you have photographed.
The Akkala ancient tech place will tell you more. Pictures you take are added to the Hyrule compendium and you use those images to find more of what you want.
Now that I've beaten Ganon I think I'm going to hold off from 100%-ing the game until I pick up the Switch and that version of the game.

Hmm. I'm not sure there is really anything that I know now that I wished I had known before because it was all fun just learning those things in the first place.

I would wish that I'd forget everything should I restart the game. Uncovering the map is the main attraction in this game, it'll be only half as fun on a second playthrough if you know where everything is and what every locale looks like.
Status report!
I've currently 'done' 3 of the 4 devine beasts, beaten 66 shrines, found little under 100 Koroks and unlocked the Master Sword, which I so far have only ever used to chop down trees to collect wood. I still have to climb 2 or 3 towers in the top left corner of the map, which I started heading to yesterday. Don't have a clue how much time I've spent in the game so far, but I'd estimate it to be about 50+ hours
If there's one thing I would have liked is more enemy types. You basically have bokoblins, moblins and lizalfos, keese and chuchu's. That's about it, save for the odd guardian. That's not much to cover about 100 hours of play.
If you go to your switch profile it will tell you how long you have played.
Yeah a few more enemies would have been good and an ingame clock would have been an easy and convenient thing to have been implemented.

Oh I thought you meant an actual in game clock, which there is, which tells you the time in the gameworld. You can check the Wii U activity log and it will tell you how long you have played all of your games.

Yeah I know about the activity log but having a clock right there in the actual game is just so much more convenient and easier.
