I honestly liked Sunshine slightly more than Galaxy. I prefer the mulit-star hub levels, and I loved the gameplay mechanics of FLUDD. Gamespot once called Sunshine a "Pilotwings-platformer," and I agree with them. My favorite game on N64 is Pilotwings 64, and my second favorite is Mario 64; Nintendo basically combined elements of both games into Sunshine, and created a very unique and fun game.

Here are some problems, when you have a platformer where you can fly or hover, there is no challenge in the game. In sunshine the platforming is very easy with your hover nozzle because you can float, allign yourself, get a cup of tea and land. That's no challenge plus it is slow. Platforming is basically an obstacle course where you have to use your powers to get through. The nozzle breaks that challenge.
Your second point about multi star hub level! So you prefer doing the same level over and over again. Maybe you like to explore, but in Sunshine there is nothing to explore, because the only Shine that you can get is the one that your mission one, with the exception of a few secret ones. So you have an huge levels with only one Shine. The rest of the level is empty filler. Unless you like to hunt for blue coins.
So therefore Galaxy >> Sunshine (I still think Sunshine is awesome)

My advice play Kirby Dreamland 2. He can fly, copy powers of his enemies and guess what he can ride a hamster. That's right up your alley

I actually found Sunshine to be a far more challenging game than Galaxy, not easier. FLUDD added so many more ways to play a level too. As far as the multi-star levels thing, yeah, I liked the exploration in those levels and finding all of the blue coins was a lot of fun. I also liked climbing to odd places like the very top of a high tower or building; this is impossible to do in most other games, but Nintendo allowed it. This added a ton of replay value for me.
The only Kirby game I've ever played was Kirby NES on VC which was good, but not great. I may have to try out Kirby 2 someday.
EDIT: Oh, and it's not like combining ice cream and pizza. It's more like adding spicy chicken to pizza and creating a delicious new treat.
The only challenge was when you lost your your hover nozzle. Like in the void levels, but did you get 120 stars in Galaxy? There are some levels, think daredevil commets, purple coin challenges that will easily take 10 lives at a time. I found Sunshine difficulty uneven. The normal levels were easy and the void levels were difficult, but I am not sure if it is because the platforming or because you are so used to using the hover nozzle as a clutch that you are lost without it. Galaxy imediately learn you the moves and you get better and better, and you are therefore better prepared for the harder levels.
I think you might find Assasins Creed to be enjoyable too. With the climbing an stuff. You seem to be a guy who likes exploring type of games. I think the Zelda's, Metroid's and Hamtaro is better suited for you. Just keep it away from Mario, exploring should lead to secret levels and not to nice vistas.
About the blue coins! You are beyond hope
Kirby Dreamland 2 is a Gameboy game. I think it might be hard to find. But you will probably think of it the same way as the other Kirby you played.
P.S. try looking on youtube for shortcuts in Galaxy, the game is versatile than you think.
A health potion does not qualify as doing something about the continually declining health bar, and I don't care to have to keep a big load of potions that temporarily stop the decline either.

You just have to create the "heat potion". I don't remember what the formula is (I think the halapino). Either way I think that level is suppose to be like that to ramp up the difficulty. But if you must there is a potion to it. Try to see if its in your alchemy book or if all else fails lok at some FAQS (there's also the moving to different map trick).
