I've seen about 4 or 5 of them. There'll be a pillar of light from where they've landed. I think they only last between night and morning time.

I've seen one fall once and just today saw a pillar of light. Didn't know what it was though. What's there to find?

Yeah when I first saw them I didn't know what it was. If you can get to it before the light disappears you'll find a star fragment. They can be used in cooking elixirs but they are also needed for upgrading armour equipment via the Great Fairies.
I've really been making progress over the last 2 weeks or so. Of course, that's been helped mightily by the fact that I've been able to pour in 2-3 hours a day on average. Not sure how I stand on that. If I could only play for like half an hour a day, as is more in line with what I can usually commit, I'd be frustrated at the lack of progress. On the other hand, it's not as if half the overworld is just there for filler, there's always something to do or discover.
Yesterday I arrived at the gerudo dessert. I like how true the Gerudo are to their original envisioning on the N64. They're much closer than the Goron or the Zora for that matter. The way they're being portrayed here is hilarious as well, with how dedicated they are to going out in the world to find a Voe. I laughed out loud when I found the 'dating school'.
I'm also dying less in combat, although I suspect there is a form of rubber banding in play. In the early game, I got one hit killed quite often, but now I notice I usually have a quarter of a heart left after being clobbered by a powerfull foe. And framerates might be improved, but there's still something about Moblins and their dark art of crippling framerate whenever you knock them over.
I think I've currently done about 40 shrines, 50 or so Korok seeds and have 3 Sheika towers left to discover.

Doesn't it have more to do with how you've expanded your heart containers or upgraded your armour etc? I found white boboklins appeared when I got more powerful and some had really powerful swords that could halve your life in one hit. I have reached something of a plateau in terms of strength and defence. I can take out most Hinox and Guardians fairly easily (barring interference - like other enemies joining in). Lynels are harder, but I've avoided most. I recentely bought the stealth gear, loving how easy it is to sneak up on things, not enjoying Yiga assholes though.
The Yiga Clan is annoying.
Yeah the Yiga's annoy me too, especially when I'm already in the middle of a fight with other enemies.
stalfos are the worst though. Every fricking night, pop up from nowhere. I was in a Guardian fight, ready to deflect its laser when they appeared and the cursor kept locking onto them rather than the guardian so I couldn't deflect its laser. When they came close I "killed" them but of course they just rebuilt themselves non stop (skulls intact) and the same shit kept happening with a guardian breathing down my neck. Got a couple of awesome shields destroyed because of stalfos.
I was hoping that the luminous outfit would stop them from attacking me but noooooooooooooooooooo.
Also, I wish I could stable the stalhorse, I have a monster bridel and everything.
