Nintendo has announced that Punch Out is coming to the Wii on May 18th.
Not a lot of details have been announced aside from the date and this little blurb from a Nintendo rep:
"It will be interesting to see too how gamers react. I think they're going to react great to the motion control capabilities of the Wii with that game because you're used to hitting buttons and doing your blocks and your throws and kind of dodging out of the way, but now you can do all that with your own body, so it's going to feel you're right there as a boxer." - Charlie Scibetta, Senior Dir. of Corporate Communications, Nintendo of America
So it sounds like they're opting for more of a Wii Boxing style rather than the traditional controls from the NES and SNES. I hope that they do a good job, as I was never 100% impressed with the boxing controls on Wii Sports.

Glass Joe
Von Kaiser
King Hippo
Soda Popinski
No word has been mentioned if any new boxers are showing up, but I really hope so. Half the fun of Punch-Out was seeing what insane boxer was next. But if it's all the same let's just leave Don Flamenco retired.

How can you play that fossil and its fossilized dumps?
speaking of fossils ... NES games should still be freebies in animal crossing, not sold for 5 quid on the virtual console. then i wouldn't mind collecting them
Let's instead talk about what they should have done with this game.
Online play, weapons, blood, black and white graphics. Create a character, a giant penis boss, a boobie boss. Crowd riots, boxing animals and more.
Oh and bump map EVERYTHING.
Also have a NES boss with legs and burn him to the ground and hear that archaic POS squeal like a piggy.
Don't forget the bloom!
And the Penis boss must squirt fluid from his head when you hit the knockout.... blow.
Please ignore the little troll behind the curtain. He can't truly appreciate how good this game is going to be.
If you haven't already go back and check out the official homepage - http://punchout.nintendo.com/ It's been updated and now you can view a fight with the second challenger Von Kaiser. Looks like they'll be adding a new boxer every day so it looks like we'll find out who the remaining 3 mystery fighters are sometime next week or the week after.
if i were to try one of the VC punchouts would it be a good test to see if i should care about this (because as of now screenshots and hype do nothing for me) or is it one of those things that i'd have to have been there at the time?

It's very possible that it's just one of those games you needed to play at the time, because frankly the original Mike Tyson's Punchout (which was later changed to just Punch Out after his contact ended and legal troubles began) was about as big as any NES game ever was. For a while it was a big as Mario or Zelda.
That being said it's still a real solid game and I still recommend trying it out. I'd go with the original NES game over the SNES version. The SNES version isn't bad, but it has a couple quirks that I wasn't a fan of like time limits as opposed to 3 rounds. Plus, Punch-Out Wii is made up mostly of the boxers from the original so it'll give you a little bit more of a foundation if you play the original.
The first Punchout still hold up extremely well today. It's still just as challenging and fun. Super Punchout is fun, maybe the easier of the two.
