I bought a Toshiba 32DT1U 32" 720p LCD HDTV for $300USD from Best Buy last December, and absolutely love the TV. It has 2 HDMI, 1 component, 1 composite, 1 PC input, and 1 optical audio output. It upscales SD content fairly well, and I haven't experianced any noticable lag when playing games. Not sure if they sell this model where you live, but I'm sure there are similar models.
All I can contribute is that I've had excellent results with Samsung TV's. In the CRT era Toshiba was the best bet, but now I prefer Samsung in terms of customization and general quality.
Sammy owner here. 32" LCD. It has starte3d to show some image retention issues, but I guess that's something that happens with most LCD dispplays out there.
Is there a difference in LCD and plasma? I might be looking for a new TV within the month.
Under 50 inches there is not much difference. Plasma is better for home cinema type set-ups where you have dark rooms and straight on viewing (better blacks). LCD is better for multiple viewing angles. Also, no burn-in with LCD.
Whenever I've bought it's come down to how it looked in the shop from different angles.
Only other advice is to go as big as you can afford.
Is an LCD more energy efficient?
It will be about 40 inches or less. Probably 40. Our living room is small enough where I see no reason to go bigger.
Plasma's use more power.
When I built my house I made sure to install a "kill switch" for the entire game room, so when I leave everything is shut-off (the stand-by power on these appliances adds up fast).
For those too lazy to click the link, it's a 32" LCD 720p TV. 2xHDMI, 2xComponent, 1xComposite, 1xPC input, 4ms response time. No complaints yet. I was glad to find a Bravia as it's the one brand I've consistently heard high reviews for, for what little I know.
Now to get some component cables.

I was just thinking of this this morning.
Nice going. I suggest you upgrade the output cables on your PS2 and Wii (if you have not already). Going to component cables on the PS2 makes a big difference.

Nope. However, the official component cables for the original Xbox are called Xbox High Definition AV Pack. Search for those, and you shouldn't get anything for the Xbox 360 in your searches, Yoda.

Another noobish question. My sister had an HDTV and I have standard, but my picture looks sharper than her's does. Do you need component cables to make the picture look sharper? I should mention tha she has Direct TV and I have cable, not that that makes much of a difference. Her picture usually looks grainy or pixelish or even both at times.
So replacement time! Honestly I really don't know much to judge a purchase on. Mainly when looking I've checked the number of inputs (composite, component, HDMI) and response time. But not much else to go on.
I'm still going on the cheap side, budget up to $350CAD. Mainly looking at 32" sets.
