I still get goosebumps from remembering getting out of the boat in Seyda Neen at the beginning of Morrowind. The way the water looked was insane. Killer main theme as well.
WarCraft 3 was awesome as well. The current DotA craze spawned right with this game, as a WC3 custom map.
Fun fact: I've never played Vice City. Played a bit of GTA III (LTTP) and well enough of San Andreas, but I have never touched VC.

In some ways I still think Morrowind was the best one. The variety in environments and the atmosphere cannot be beat. I would love some kind of HD release of it.
Morrowind is definitely the best ES game to date. While Beth has succeeded (wildly) in turning the ES franchise into a mainstream behemoth, the truth is that it has done so at the expense of depth in the games' RPG elements.
